Phalli aur gosht ka saalan is very popular in our family food and in my relations. As soon as the season 
 comes for drumstick, in every body’s house, drumstick (vegetable) will be cooked. In my uncles house there is a drumstick plant, which will be distributed to his neighbours, when it is in plenty. Drumstick should be selected with its medium thickness, not very thick, then it will be very dry and the seeds will be hard. As it’s inside flesh and its seed is eaten, which has to be very soft, as it is squeezed in your mouth and the outer part is thrown, sometimes even the skin part is chewed to get the juice of it. When you buy drumstick buy fresh ones. I have cooked it with mutton; you can cook it with prawns also with the same spice. For vegetarians only drumstick curry can be made with potatoes also.
For drumstick and mutton curry, we call it as phalli aur gosht ka mittah saalan at our home. I have cooked it in the pressure cooker; you can cook in the ordinary vessel also. In this drumstick curry, mutton curry is cooked first, and then drumstick is added and cooked till drumstick is cooked and forms like gravy consistancy.

Ingredients
  • Mutton – 350 gms
  • Drumstick (cut to medium size) – 1 or 2
  • Oil – 3 tbsp
  • Cloves – 3
  • Cinnamon stick – 1 (1/2 inch)
  • Green cardamom – 2
  • Onion (big, chopped) – 1
  • Chilli powder – 2 tsp
  • Turmeric powder – 1/2 tsp
  • Ginger and garlic paste – 1 tbsp
  • Tomato (chopped) – 1
  • Water – 1 to 1 1/2 cup
  • Salt – as per taste
Method
  • Preheat the vessel or pressure cooker with oil, when it’s hot, add whole spices, onion and fry till transparent and soft.
  • Add ginger and garlic paste, roast it with onion for 30sec, add mutton pieces and roast for 2 to 3min.
  • Add chilli powder, turmeric powder and roast it for 30sec, then add chopped tomatoes and roast it for 1 to 2min.
  • Add immediately water, mix it and close the lid and cook it for 3 to 4 whistles come in a pressure cooker, or till meat is almost cooked, switch it off.
  • After sometime, open the lid of pressure cooker, you can see that mutton is cooked well and oil floats on it.
  • Add the drumstick pieces and mix it well in the gravy, with salt.
  • Let it cook till it is soft, if it is in pressure cooker it will cook for 1 whistle as per my cooker.
  • Now simmer the gravy for 10min, till a good consistency of gravy is formed(from thin gravy to little thick gravy) and gravy has left oil on top.
  • If it is in a vessel then as soon as the mutton is cooked add drumstick pieces, cook it for 10 to 12 min, till drumsticks are cooked, simmer it 10min, there should be enough liquid in the vessel.
  • At last can garnish with coriander leaves.
  • Serve hot with plain rice, chapathi(roti), dal or rasam.
Notes
  • Can add coriander powder also 2tsp, but I have not added in it.
  • If the drumstick is very long then 1 is enough, but it is up to you.
  • When you simmer the curry, there should be enough liquid in the vessel. After simmering it forms a good consistency.
  • With the same ingredients, can use potatoes, beans, arvi (small colocasia or taro root), it goes well with mutton/lamb or prawns.
  • For vegetarians, just avoid the meat and cook with the same ingredients.
