This mutton biryani is quite different from my other biryanis as this biryani is prepared by my husband and it is going to be easy and simple for every one. In this mutton biryani you need not cook the rice separately. You can add the rice directly to the gravy and cook it. In this mutton biryani, only simple spices are used, which you can find in your kitchen.
This mutton biryani can be made by anyone who is learning cooking, easy for bachelors and others. Cook this easy mutton biryani and enjoy with raitha and boiled eggs.

Ingredients
  • Mutton (with bones) – 800 gms
  • Salt – as required
  • Marinade
  • Ginger and garlic paste – 2 tbsp
  • Curd – 4 tbsp
  • Chilli powder – 2 tsp
  • Turmeric powder – 1/2 tsp
  • Garam masala – a pinch
  • Gravy
  • Oil – 1/4 cup
  • Cloves – 4
  • Cinnamon stick (1 inch size) – 2
  • Green cardamom – 4
  • Onion (sliced) – 4
  • Tomatoes – 2
  • Ginger and garlic paste – 2 tbsp
  • Green chillies (chopped or sliced) – 4
  • Mint (roughly chopped) – handful
  • Coriander leaves (roughly chopped) – 2 handfuls
  • Chilli powder – 2 tsp
  • Coriander powder – 2 tbsp
  • Garam masala – 3/4 tsp
  • Rice
  • Rice (basmati) – 2 1/2 cup
  • Water – 3 cups
Method
  • Take mutton in a bowl. Add ginger and garlic paste, curd, chilli powder, turmeric powder and garam masala. Mix well and leave it for 1/2 an hour to an hour. As obvious, the longer the better.
  • Heat up a big vessel. Add oil to it. When the oil is hot add the whole spices, sliced onions and green chillies. Fry until the onions are cooked and light brown.
  • Add ginger and garlic paste. Stir well. Add turmeric powder, red chilli powder and coriander powder. Stir and fry for about a minute.
  • Add the marinated mutton with all the marinade. Let it cook for sometime.
  • Add mint and coriander leaves and cook further.
  • Add tomatoes and salt and cook until the tomatoes are cooked and soft. The quantity of salt should be for both rice and gravy taken into account.
  • Add washed rice to the gravy, mix well and then add sufficient water to cook the rice. The quantity of liquid (gravy + water) should be in correct quantity to cook the rice.
  • After the gravy comes to a boil, simmer and cook until all the water is absorbed and the rice is cooked.
  • Enjoy this simple and easy mutton biryani with boiled eggs and raitha.
Notes
  • You can reduce the chillies, if you do not eat spicy food or your chillies are very hot.
  • You can add any readymade biryani masala for added flavour.
  • The quantity of salt you are using should take into account both rice and the gravy.
