This dry mutton chops is flavoured with 3 ingredients which gives you tangy and sour taste. This includes curd, vinegar and lemon juice. The mutton chops should be thin so that it is cooked well and easily. There are front chops and back chops. You can use either of these. Lamb/mutton chops are liked by every one. It is every bodies favourite. If you go to restaurants, they serve it as a starter. You can even make it at home and enjoy. If you are unsure you can ask your butcher for chops and they should be able to provide you with the chops.

Ingredients
  • Mutton – 300 gms
  • Oil – 2 tbsp to 3 tbsp
  • Chilli powder – 1 tsp
  • Crushed chilli powder – 1/2 tsp
  • Ginger and garlic paste – 2 tsp
  • Turmeric powder- 1/4 tsp
  • Salt – as per taste
  • Curd (thick) – 3 tbsp
  • Vinegar – 1 tsp
  • Lemon juice – 1 tsp to 2 tsp
  • Water – 3/4 cup
  • Coriander leaves few chopped roughly – less than 1/3 cup
  • Extra spices
  • Cumin and coriander powder
  • Cumin seeds – 1 tsp
  • Coriander seeds (coarsely crushed) – 2 tsp
Method
  • First mix all the spices (except cumin and coriander powder) with curd, lemon juice and vinegar in a bowl. Then mix the mutton chops and keep it aside. Add salt as per requirement.
  • Preheat a non-stick pan. Put oil. When it gets warm add cumin and coriander powder, stir well for about 15 seconds. Do not burn it. Then immediately keep the mutton chops on it. Do not turn immediately or stir it.
  • After about 2 to 3 mins, turn the mutton chops. You can see that the cumin and coriander powder are attached to the mutton chops. After 1 min, add water about 1/2 a cup on it to cook the mutton chops well. Stir the mutton chops with water or just move it. Do not turn sides. If the masala is coming out it’s okay. Now close the lid and cook it on medium flame.
  • Stir it occasionally. If the water gets dry, add water about 1/3 cup a little bit at a time until the mutton chops are cooked. Turn the mutton chops in between so that they are evenly cooked. When the mutton chops are cooked and water gets dry, simmer the flame and add chopped coriander leaves to it and mix well. Let it cook well until the mutton chops is dry and roasted well. All the water should be absorbed – no liquid should be there. You can see that even coriander leaves gets roasted well. Switch it off
  • Serve the dry mutton chops fry with any sauce. Garnish with onions and lemon wedges.
Notes
  • You can add chopped chillies to the mutton chops fry if you want to make it hot.
  • You can cook the mutton chops on simmer by closing the lid.
  • Add water in intervals a little bit at a time until the mutton chops are cooked. Turn the mutton chops over occasionally to cook evenly.
  • You can reduce the spiciness according to your taste.
