Currently cauliflower is pretty cheap (0.85 euros per large head), so here's a suggestion how to hit two birds with one stone.

We take a large cauliflower, separated from the green leaves and divide the vegetables into florets. We cut the stalk in two or three pieces. The vegetables with 1/2 L of water and 1/2 L broth (if necessary with vegetable stock), some milk and a slice of lemon (he stays nice and white), salt and cooked.

When well cooked, (about 15-20 minutes) we take half of the vegetables (without the stalk!) Out and scare the starting (will be needed later). The remaining vegetables including core is now mashed with the magic wand, plus a little cream, herbs to taste and season generously nutmeg and finished is a good cauliflower soup. A few croutons on it, makes the whole thing to a complete meal.

The second half of the cauliflower we process as follows:

Butter in a pan, with a Bissel olive oil (it burns the butter not so fast!) Into florets and toss well several times. Done. Of course you can also pour in a few breadcrumbs with, that makes things a little crispy. To a fine mashed potatoes or just a crisp salad.

Even if it tastes fine in a separate pan two or three tablespoons sesame (not fat!) Anröstet and finally gives the Blumenkohlröserl.
