Ingredients:


  • Whole chicken 1 (with skin)
  • Oyster sauce 4 tbsp
  • Soya sauce 2 tbsp
  • Ginger garlic paste 2 tbsp
  • Vinegar 5 – 6 tbsp
  • Onion 1
  • Shallots 1
  • Capsicum 1
  • Ginger 1 piece (medium size)
  • Garlic 3 to 4 cloves
  • Chinese five spice 1/2 tsp
  • Red chili flakes to taste
  • Sugar 2 tsp
  • Salt to taste
  • Oil as required

Directions:

  1. Mix together oyster sauce, ginger garlic paste, vinegar, Chinese five spice, sugar, soya sauce, red chili flakes and salt in a bowl.
  2. Apply this mixture in and out of chicken with hand.
  3. Prick the chicken with a fork.
  4. Thinly sliced shallots, capsicum, onion, ginger and garlic cloves.
  5. Stuff this mixture in chicken.
  6. Leave to marinade overnight.
  7. Now place this stuffed and seasoned chicken on a baking dish.
  8. Drizzle oil all over it and cover it tightly with foil.
  9. Bake it at 180 C for 35 – 40 minutes.
  10. Now remove the foil and bake it for a few more minutes at high temperature until the top turns slightly golden.
  11. Garnish and serve.
