Ingredients:
- Whole chicken 1 (with skin)
- Oyster sauce 4 tbsp
- Soya sauce 2 tbsp
- Ginger garlic paste 2 tbsp
- Vinegar 5 – 6 tbsp
- Onion 1
- Shallots 1
- Capsicum 1
- Ginger 1 piece (medium size)
- Garlic 3 to 4 cloves
- Chinese five spice 1/2 tsp
- Red chili flakes to taste
- Sugar 2 tsp
- Salt to taste
- Oil as required
Directions:
- Mix together oyster sauce, ginger garlic paste, vinegar, Chinese
five spice, sugar, soya sauce, red chili flakes and salt in a bowl.
- Apply this mixture in and out of chicken with hand.
- Prick the chicken with a fork.
- Thinly sliced shallots, capsicum, onion, ginger and garlic cloves.
- Stuff this mixture in chicken.
- Leave to marinade overnight.
- Now place this stuffed and seasoned chicken on a baking dish.
- Drizzle oil all over it and cover it tightly with foil.
- Bake it at 180 C for 35 – 40 minutes.
- Now remove the foil and bake it for a few more minutes at high temperature until the top turns slightly golden.
- Garnish and serve.
