Ingredients:

  • Chicken Breast (skinless & boneless) 1 half
  • Homemade Pizza Dough or (16 ounce) package of Pre-Baked Pizza Dough
  • Red Onion (thinly sliced) 1/3 cup
  • Fresh Cilantro/Coriander Leaves (chopped) 2 tbsp
  • Shredded Mozzarella Cheese 1 cup
  • Barbecue Sauce (divided) 1 cup
  • Marinara Sauce 1/2 cup
  • Sesame Seed Oil 1 tbsp

Preparation:

  1. Scoop out insides of tomatoes with a melon baller. Fill with chicken salad. Sprinkle with pepper and chivesHeat the sesame oil in a skillet over medium heat.
  2. Place the chicken breast in the skillet, and top with 1 tablespoon barbecue sauce.
  3. Cook for 10 minutes, turn, and top with 1 tablespoon barbecue sauce.
  4. Continue cooking for further 10 minutes, until juices run clear.
  5. Cool slightly, and cut into chunks.
  6. Preheat the oven to 425 degrees F (220 degrees C).
  7. In a small bowl, mix the remaining barbecue sauce and marinara sauce.
  8. Spread evenly over the pizza crust. Sprinkle with shredded mozzarella cheese .
  9. Arrange cooked chicken chunks and red onion slices over the top.
  10. Bake 15 minutes in the preheated oven, or until the cheese is melted and bubbly.
  11. Remove from heat, sprinkle with fresh cilantro/coriander leaves, and let sit 10 minutes before slicing.
